Winter citrus is the perfect simple dessert

I’ve told you before…I’m not a big dessert guy. I would probably rather have more cheese or a glass of sweet wine. So when I do make dessert when friends come over, like this one I talked about a few months ago, it’s got to be as simple as opening a bottle of wine. In wintertime, it’s an easy choice: I always reach for citrus. It’s the perfect end to a meal: it’s simple, light, sweet, tart, refreshing. It leaves guests feeling good at the end of the night…which is the best thing you can do for your friends.
So, here you have my recipe citrus with honey and extra-virgin olive oil, served over a bed of crushed ice and topped with a little sprinkling of sea salt…it is everything I like in a dessert: fresh, easy, satisfying and seasonal. You can use grapefruit, blood oranges, Cara Cara, pomelo, tangerines, whatever you have in the house. At Jaleo, we serve it with olive oil ice cream, but you don’t need it. The idea is to bring together all the contrasts of sweet, bitter, salty, and tart. The dessert also uses one of the most important but underused ingredients in your kitchen: ice!
