I can't think of a better way to start your podcast Chef than by having a discussion with Eric Ripert. The two of you speaking about Tony Bourdain made me cry, but also happy that the two of you talked about him.
So for anyone here who admired Bourdain ... if you haven’t seen RoadRunner on HBO and you have three hours and a couple of boxes of tissues. Go watch it.
Chef, when you have as many restaurants as you guys do. Sustainability is over, you can’t only have as much fish in the ocean or farm raise . Now , feeding the world is another very important issue but as long as we don’t make a difference in what we offer in our menus and people are ok with it, there is nothing to do. Chef Ripert is right, even if you become a vegan restaurant that’s not the way to go. The soil is erroting because of too many vegetables being grown as well.
Loved the podcast, and highly recommend going to YouTube to watch the recipe segment in full- filled my soul today and now I’m off to get tinned squid to fill my belly!
Love the whole Longer Tables vibe but jeez! Do we need to hear from these celebrities ever again? They're over-exposed on FOODTV and if you want to really make a difference, bring us people who . . . really make a difference. Eric Ripert, love him but he has written so many books and been on every podcast on every book tour. I can retell his stories verbatim if you need a stand-in.
No one is forcing you to listen or read anything about Chefs Andres and Ripert. Both of these men do great things for those in need, so as they say, if you can't say anything nice don't say anything at all.

The mishaps of a young Jose and Eric as waiters was hilarious! Looking forward to learning more about rural Spanish cooking and recipes.
