Jose, you share your heart with the world and that's why we all love you ,Longer Tables, WCK.. We as humans can and should learn from our mistakes and use them as an opportunity to grow and do better. Never be afraid to try. You have paved for us to grow and learn with your words, recipes and sharing .You are the best.
Thank you for this, Chef, and for everything you and your super-hero angels do. Here's hoping that we humans will evolve to have the compassion, generosity and energy that you all have! Maybe it's just sleeping and your example will awaken it.
Jose, Colorado will be safely in Democracy’s corner. We gather the family every Sunday and when we are not making your short rib recipe we experiment. Yesterday was from Steven Colbert’s(and his wife’s) new cookbook. chicken l’orange.
In the town of Bermeo Bizkaia Euskadi Spain during festivals they have a Stew (Sulalki) traditional Basque meat stew making competition. My cousin the butcher has won several of them. so much fun to go with your quadrilla and cook and spend the day with friends in a friendly competition.
Lovely post, chef, and I'm grateful for your reassuring sentiments.
But I'm curious about the tomato recipe--it seems like a powerful lot of sugar (2 cups?) and olive oil (3 cups?) for just a pound of tomatoes. Is that correct?
Nancy! You're so right...we must have mis-scaled the tomato recipe from The Bazaar. We'll poke around and will make sure to share the right version of the tomatoes—those would be very salty, very sweet, and very oily!
Thank you for ur quick response. You are exactly right Jose was there and from the beginning supplied 26,000 meals. I had not read anything in the newspaper except the horrific incident, the climbing death toll, and the destruction. I am also from Spain as my parents were born in Galicia.
My husband and I return every year and we just returned from 3 weeks in Andalusia.
Pls. give me the address of where I can follow Jose and his team. I am ashamed that I did not do proper research before I wrote those nasty comments again please apologize for my ignorance to Jose, his family, and your entire supported team.
I follow his crisis team and videos constantly and am so proud of him and his family and what they have done since they immigrated to America.
Again any addresses on Facebook or the web would help me so much to continue following this great man and the wonderful things he does for America and the world.
Your words mean so much…. My husband and I endured hours of wind and rain and sounds of crashing trees to emerge unscathed from Hurricane Helene in Western North Carolina. We had already had plans to escape to France prior and are so very fortunate to have made it here. Now we are faced with tremendous guilt for leaving our community behind and worry about the unknown of the election….
Also, a slightly different subject: if I give $50 a month to WCK (which I do), couldn't I have a free upgrade to Longer Tables? (Just say I'm askin for a friend!)
Excuse me, you need to apologize to him. WCK 1st response teams were there in hours when it was safe to serve sandwiches, fruit and water until kitchens were set up. He was in Valencia unloading supplies and posted it all over social media in English and Spanish. Suggest you go look at the posting then come back and say you are sorry for your rudeness.

Would love to hear more about this competition! Does your cousin have stories to share from it?
