Ironically, outside of the relatively short Mexican poblano season, all the "poblanos" in Mexico (and California where I live) are Chinese imports and arguably not poblanos at all! One of the many reasons I grow my own (from Kitazawa seeds of course). I actually thought for a minute these "China Poblanos" were going to be the subject of this article...

And of course, in NYC, many restaurants with those food roots. Chinas Criollas, if I’m recalling correctly.

China Poblano is my favourite restaurant in Vegas, hands down. We go every time we are in sin city. Is there any way you could share a recipe for the La Leng Miang (cold noodle salad) dish on the menu. I know it's a classic and many recipes are on the web but I have just never tasted one as good as this one. I've been searching for the recipe/trying to recreate it for years and would be ever so grateful!

One of my friends is still raving about the Silencio taco he had a few years ago... love this whole concept!

Love, Love, Love China Poblano. (it's my main bribery mechanism to get my husband to go to Vegas...promise we eat at China Poblano). Thank you for the background story and the beautiful use of human stories to bring people together thru food. I work at a medical school and we are making a heavy push for increased culinary medicine. The data alone on importance of food, nutrients, healthy soil, etc., for health and wellness (especially in light of chronic disease!) show the benefit above and beyond any single pharmaceutical drug. However, I really believe the often overlooked sense of community, human connection and compassion that occurs when people sit down and eat together is just as important to health and wellness as the 'mere' biochemical benefits of healthy carbs, proteins and fat. Food as Medicine is truly a Joyful Experience and would make the world a better place. Thank you for doing what the medical 'industry' has not!
