Living in San Miguel de Allende, we can get huitlacoche almost year round. I love it on tacos and in crepes the way Emperor Maximilian liked it with a poblano cream sauce.
We had this for the first time last October when we were in Oaxaca. I had it in on a quesadilla from a food stall set up on the street. It was so divine! I would love to find that here.

I love huitlacoche! I am fortunate to live in a town with an amazing chef who has used it on his menu for years. Josh Niernberg of Bin 707 in Grand Junction, Colorado. You have to come out and visit and try his food! (He's also a JBF finalist for Outstanding Chef this year.)
I love his whiskey cocktail called Where Is My Mind? that features haitlacoche bitters. Absolutely delicious!

I love huitlacoche and bought it in the past both Jeff Organics and Lanis Farm in New Jersey. Delicious!

I agree! We have a wonderful memory of a huitlacoche blue corn Oaxaca cheese quesadilla in Puebla Mexico. Some of the best street food you can find.
