Two new vinegars, two new recipes

Hola people! It’s a busy week over here in our world—lots going on as we head into fall. Today I want to tell you about two new products that are a result of a collaboration a whole decade in the making…I fell in love with the vinegars of Lindera Farms ten years ago!
You may remember back in March when I talked about Daniel Liberson and his company Lindera Farms, an amazing vinegar producer from Delaplane, Virginia. We have been working hard behind the scenes to bring to you a collaboration I’m so proud of—gazpacho vinegar and a sangría drinking vinegar.
The gazpacho vinegar is made with all the ingredients of a traditional gazpacho, and is perfect for vinaigrettes, marinades, and dipping sauces. The sangria drinking vinegar (I know, you’re probably thinking, “José, why would you drink vinegar?” And I would tell you, because it’s delicious!) can be combined with cava, red or white wine, or sparkling water for a refreshing drink.
These vinegars, made by the brilliant vinegar whisperer Daniel and his team, are a beautiful reimagining of two of my favorite Spanish classics, and give you a shortcut to deep, complex flavors. I’m happy to have them in my own kitchen, and even happier that you can have them in yours.
Below are two of Daniel’s recipes that give these vinegars a chance to really spread their wings, Grilled Eggplant with Gazpacho Dressing and Strawberry Salad with Sangría Vinaigrette…but people, the possibilities are endless, and I would love to see how creative you can get with them!
