The quickest, fastest salmon for a busy weeknight

Hola people…a lot of us have had a lot of snow this week, and it’s the first week back after a long holiday, but you still need to make dinner for yourself and your family. So why not take it easy?
Today’s recipe is perfect if you’re just getting back to cooking after maybe doing a lot of it over the past month. And maybe as you’re getting back to your routine, it can feel overwhelming to plan for anything besides what you already know and what makes you comfortable. So this is not only healthy and delicious, it can be made without ever turning on your oven or stove, and without creating a bunch of dishes to do later! I’m talking about salmon en papillote, or salmon cooked in parchment paper.
Salmon of course is an amazing fish to work with because you can do almost anything to it—roast it, grill it, sear it in a pan…or if you have super fresh fish, you don’t even have to cook it. But have you ever heard of microwaving it? José, you might say…that can’t be right.
The method of cooking any fish in papillote has been used for hundreds of years, but it’s usually baked or steamed. But why NOT use the microwave? We use it to heat up leftovers all the time, so why not a full meal with fresh vegetables and an amazing, silky piece of salmon? And once you’ve mastered this recipe, I think you’re going to find that it’s really versatile, and you can try different kinds of fish, different herbs and seasonings, maybe you add a splash of wine for some extra flavor…get creative, people!
Of course this recipe is perfect for a quick weeknight dinner, but it’s also elegant enough to enjoy at whatever pace you want—just because you made it quickly doesn’t mean it isn’t special! Light some candles, open a bottle of wine, put on some music, and make an evening out of it.
