This week on my podcast, I talked to the culinary historian Michael Twitty, who is dedicated to understanding the varying peoples and cultures that a single dish can reveal and represent. I would love Michael to get a look at this recipe because…I have no idea where it comes from or who made it first. All I know is it’s a salad that I love to eat in winter. It’s warm, but also fresh and very satisfying.
This recipe is all about the crunch, you want a good lettuce that can hold up to the hot oil. If you don’t have radicchio, any crunchy variety–gem, romaine, Bibb, endives–will work.
