I have a super important question for you today…how much corn have you eaten so far this summer? I hope the answer is: José, I don’t know exactly, but it’s been a lot.
This is the time of year to eat as much corn as you can—it’s so sweet like candy, you can even eat it raw if you like, straight off the cob like an apple!
So, today, this post is all about corn. We are going to start with my favorite trick for getting all those husks and silk off the corn, and then I’m going to share a few of the most delicious ways to eat corn without even turning on the oven. Sure, sure, I know corn is great off the grill, or steamed, sauteed or boiled, but when it's so hot out, I just use the microwave. (I also like the microwave for Cacio Pepe Mac n Cheese, too!) Honestly, it’s the best way. The silks come right off, and the kernels get sweet and tender in minutes!
So here we go.
