I always have this tapa in my fridge
And it is the perfect gift to make for someone you love!
As a cook, I often get asked about what I always have in my fridge. If you had a chance to listen to my chat with Ron Howard on my podcast, you know that one of things I always have is a jar of marinated olives…the perfect tapa to serve to unexpected guests, to give as a gift on the holidays, or when you are invited to a dinner party, or to snack on while you are cooking (that’s what I do!).
There are so many different kinds of olives out there. There are the Gordal, which are the big gigantic meaty ones from Spain that I love, and the Kalamata which are so dark purple and delicious. Just play with olives until you find the ones you like the best! The beauty of this recipe is that you can make it with anything you have on hand—fresh herbs, dried herbs, garlic, whole spices, citrus peel, whatever. This recipe calls for a pound of olives but you can make more (like I usually do) or less and adjust the seasonings.
