If you’ve been reading this Substack for a few months, you might remember when I told you about the big debate between the sincebollistas and the concebollistas, the people who make their tortilla española without onions and the people who make it with onions.
Today, we are going in a completely different direction…a tortilla that doesn’t even start with potatoes! This is a version of a recipe I learned from the great Ferran Adrià, one of my first bosses when I worked at elBulli in the 1980s, who created a brilliant way to make a tortilla with potato chips instead of starting with potatoes, because, well, potato chips are just fried potatoes! Ferran is brilliant at this, seeing the most clear, simple way to make something completely different.
For this version, we take the chip idea and we make it a rainbow…! You know those colorful chips, the ones that are sweet potatoes, taro, blue potatoes, beets. Terra Chips are the brand I can find, maybe you can find a different one. You’ll see the difference when you make this tortilla, it takes on all of the root flavors of the chips, plus the beautiful colors of the vegetable kingdom. Serve it for brunch, lunch, or with a beer for a tasty tapa.
